This recipe uses a combination of 00 flour and bread flour to create a crust that is soft, tender, and slightly chewy, with just enough structure to hold your favorite toppings. I love this pizza dough because it’s simple, forgiving, and always delivers. It doesn’t matter if it’s a weeknight dinner or a special weekend pizza night; the dough always comes out soft, chewy, and flavorful. It’s also incredibly versatile. You can make classic Margherita pizzas, load it up with veggies, or even experiment with creative toppings. The texture is perfect, the flavor is subtle but delicious, and knowing it’s homemade makes every slice feel extra special.



How To Make this Pizza Dough


To start, gather your ingredients. You’ll need 142 grams of 00 flour and 142 grams of bread flour. These two flours work together to give the dough a delicate texture with a slight chew. Add 9 grams of salt for flavor and 16 grams of sugar to help feed the yeast and give the dough a subtle sweetness. You’ll also need 170 grams of warm water and one packet of instant dry yeast, 7 grams.



In the bowl of a stand mixer, combine your flours, salt, and sugar until evenly mixed. Attach the dough hook and, on the lowest speed, slowly add the warm water. The dough will start to come together after about five minutes. Keep kneading until it forms a smooth, elastic ball, about seven minutes in total.



Cover the bowl with a clean towel and let the dough rest. A minimum of one to two hours will work, but allowing it to rise for up to three hours will make the dough more flavorful and easier to stretch. During this time, you’ll notice it slowly expand and become soft and supple, ready to take on any toppings you love.


Once the dough has risen, turn it out onto a lightly floured surface and shape it into your pizza base. This dough stretches beautifully, so you can create a thin, crispy crust or a slightly thicker, chewier base depending on your preference. This recipe really puffs up in a pizza oven, so make sure to stretch the dough to a pretty thin base. Add your favorite sauce, cheese, and toppings, then bake until golden and bubbly.
